Many people still think of soup as just a quick lunchtime option, but it can be much more! Soup can be an appetizer, a dinner or even a breakfast. Rather than getting out the can opener, here are a few quick and easy soups that you can make on your own.

Cinnamon Apple Breakfast Soup:

  • 2 cups apple juice
  • 2 cups water
  • 2 apples, peeled, cored and diced
  • 1 cup rolled oats
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup raisins
  • 1/4 cup honey
  • 1/2 cup plain yogurt (or more to taste)

Bring apple juice and water to a boil. Add diced apples, oatmeal, raisins, honey, cinnamon and nutmeg. Bring back to a boil and then let simmer, covered, approximately 20 minutes (stirring occasionally) or until apples have softened.  Ladle into bowls and top with a swirl of yogurt. Makes approximately 4 servings.

Quick Curried Cauliflower Soup

Soup as an appetizer must be tasty, yet light, as you are leading up to a larger meal. Here is a recipe for one so deliciously easy, you'll have people begging for more!

  • 4 cups chicken broth
  • 1 sweet onion, chopped
  • 4 cloves garlic, chopped
  • 1 bag (10 ounces) frozen cauliflower
  • 1 Tbs curry powder
  • 2 scallions, chopped
  • salt and pepper to taste

Place chicken broth, onion, garlic and cauliflower into a deep pan. Cover with a lid and let boil until cauliflower is very soft. Once cauliflower is soft, (approximately 20 minutes) remove pan from heat and use an immersion blender to blend all vegetables together. (If you don't have an immersion blender, remove small batches at a time and place in blender.) Stir in curry powder, salt and pepper and let flavors blend. Ladle into bowls and serve with scallions on top for some color. Serves 4.

"Souper" Easy Vegetable Soup

Soup for dinner can be easy and delicious! Add a salad or good crusty bread to make it a full meal.

  • 6 cups chicken broth  (or vegetable broth)
  • 2 (10 ounce) bags frozen vegetables of your choice
  • 1 can diced tomatoes (get the ones with green chilies or jalapenos for a flavor kick)
  • one diced onion
  • 4 cloves garlic, chopped
  • salt and pepper to taste

Place enough broth in the pan to cover the bottom. Cook onions and garlic in broth on medium heat until they are translucent. Add remaining broth and all other ingredients. Bring to a boil, reduce heat and let simmer 20 minutes. When vegetables are soft, ladle into bowls.
