What outdoor summer barbeque is complete without pasta salad? This simple pasta salad tastes delicious and has an elegant appearance (especially when served in a clear or white bowl). It uses basic and fresh ingredients, most of which can be purchased at your local farmer's market.

Ingredients:

  • 1 lb penne pasta (can also use gluten-free pasta if needed)
  • 1 cup freshly grated parmesan cheese
  • 1/2 cup Canola Oil
  • 1/3 cup white wine vinegar
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp sugar
  • Asparagus (1 bunch)
  • Cherry or Grape Tomatoes
  • rucola

Instructions:

  1. Boil penne pasta per instructions on package (any shape pasta can be used)
  2. Cut up 1 bunch of asparagus, separating stems and tips. During the last 2 minutes pasta is boiling, add asparagus stems. Add asparagus tips during the last minute.
  3. Once boiled, thoroughly drain and rinse pasta/asparagus (rinsing with cool water is advised to prevent asparagus from continuing to cook).
  4. Transfer pasta and asparagus to a bowl and add 2/3 cup parmesan cheese.
  5. Halve cherry or grape tomatoes and add to the dish
  6. Add 1/2 cup canola oil, 1/3 cup white wine vinegar, 1/2 tsp sugar, 1/2 tsp salt and 1/2 tsp pepper; stir thoroughly
  7. Sprinkle remaining parmesan cheese on top of pasta before serving
  8. Serve immediately at room temperature or chill if serving later that day
