Fall is in the air.  A favorite season for crisp apples and a new bounty in the harvest.  A family favorite with a stepped up topping to make it even more interesting.  This dish begs for an ice cream garnish. I have taken a family recipe and added some new ingredients to the Crumble to make it more substantial without including all the added calories.  Nuts and cranberries add to the texture and the taste.  I have also successfully changed the recipe and cut out some of the fats, flours and sugars.  And I have taste tested this with my own "Mikey" and some of my neighbors, so I know it has met the approval of a discerning audience.  I hope you too will be the judge of this recipe.

Ingredients:

For the apple filling:

  • 1/2 cup brown sugar
  • 1/2 cup all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon nutmeg
  • About 3 pounds apples, peeled, cored and thinly sliced,  Granny Smith and/or Gala and Fuji  are good combos
  • 1 teaspoon vanilla
  • 1 teaspoon butter, to grease the pan/casserole dish, or use a non-stick spray.

For the crumb topping:

  • 3/4 cup brown sugar
  • 3/4 cup all-purpose flour
  • 3/4 cup oats
  • 1/4 cup toasted and sliced almonds,walnuts or pecans
  • 1/2 cup dried cranberries – ***Add these later to the topping.  The new reduced sugar variety are a great choice for this dessert
  • 1/2 teaspoon freshly grated nutmeg
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 stick unsalted butter, room temperature, cut into 8 pieces

Directions:

  1. Preheat oven to 350 degrees F.
  2. To make the apple filling: In a large bowl, stir together sugar, flour, and cinnamon. Add apples and gently toss to coat. Add vanilla at the end and toss again.
  3. Butter a 12 by 8-inch oval dish or a 9 x 13 x 2 pan  and add apple mixture.
  4. To make the crumb topping: In a medium bowl, combine dry ingredients, add in butter pieces and combine with hands until crumbly.  Hold the dried cranberries.
  5. Top apples with the crumb topping. Place in oven and back for about 30 minutes.
  6. Slightly stir the crumb topping and add in the dried cranberries and back for another 15 minutes until golden and bubbly.   These cranberries can burn so you just want to add them at the end.
  7. Remove from oven and allow this to rest for about 15 minutes before serving.
